Grey Matter Beers

Listed below is a list off all of the beers that I've brewed, along with descriptions of each of them. I'm keeping my recipes to myself for now, but will share them upon request. So, peruse my beers, and come over and try the ones that are currently on tap!

The Cacao Idaeus Chocolate-Raspberry Brown Ale is the fruit beer for people who hate fruit beers. Named for the mixture of the genus/species of chocolate and raspberry, this beer is built on a malty brown ale with a subtle raspberry flavor and chocolaty notes. At 7% ABV, this beer works in place of dessert and will satisfy all of the craving areas of your brain at once. This beer was conceived and brewed in celebration of the birth of my daughter Sasha.

At 7.86% ABV, this liberally hopped ale (26 IBUs) is balanced by the huge malt character (FG 1.022) warming your heart and clouding your mind. Don’t be fooled by the smoothness of this beer, it goes down easily, and so will you when you get up to get another one.

The Dark Matter Doppelbock pushes the envelope of Doppelbocks into the super-massive maltiness category. This beer has so much malty character to it, that it will send your taste buds into orbit around the dense, crisp, ultra-dark lager at its core. If you hold a glass of Dark Matter in front of your face, it will obfuscate the bright light of satisfaction coming from within you.

With a creamy, persistent head, a base of Warrior hops, and a finish of Cascade hops, hop heads and ale lovers alike will flock to the tap for a taste of this very special brew. Watch your glass carefully, its red hue will deepen as your friend runs away from you so fast that the reflected light is redshifted even more.

The Propagation Pale Ale is the culmination of striking the perfect balance between hoppy and malty in this not-so-classic American Pale Ale. This high-gravity beer gives a lot of bang for your buck at 8.5% ABV while staying true to style with liberal hopping using Magnum and Willamette hops for a big hop character, without the harshness of big hoppy beers. One taste of this pale ale will propagate nothing but satisfaction from your mouth to your brain.

The Limbic Libation Barleywine is an English-style barleywine that is huge, smooth, and malty. Requiring at least six months to age, this very special beer is made from only the first runnings of the grain mash, lending the ultimate in intensity and smoothness which mellows the hop character. The Limbic system is the part of the brain responsible for emotion, satisfaction, and reward, so sipping on this barely-beer will have your Limbic system singing the rest of your brain a lullaby. The Aftershock Amber is made from the second runnings from this beer. This beer was conceived and brewed in honor of the birth of my son, Aaron.

The Aftershock Amber Lager is a dark, luscious, and smooth classic Dark Lager made from the second runnings of the Limbic Libation Barleywine. This beer has the crispness of a German lager, and the malty, mildly sweet mouthful of delight. Trying to compete with it's big brother barleywine has proven to make this beer far from a runner up. One taste of this uniquely styled Lager will rock your world and redefine your idea of just what a lager should be.

The Neuralizer Imperial IPA was brewed with the hard-core hop head as well as the big-beer connoisseur. This beer greets you with a strong floral/citrus and sweet aroma, which sets you up for the first taste. At first, you taste the sweetness of a big beer, followed by a bold hop flavor. Then, just as you're settling into your sip, you get hit in the face with the huge slap of hoppiness. The next thing you know, you've forgotten who and what you are, and all you know is that you've got a delicious beverage in your hand that is begging to be drunk.

The Optimal Density Imperial Stout is aptly named, as this beer is a meal in a glass. Dense enough to absorb nearly all incoming light, this dark, rich, velvety, and luxurious triple stout will ignite your senses and impair your judgment as it glides over your tongue with it's pleasant roasted character and smooth, almost fruity finish. The light carbonation allows you to fully explore the textures in the beer and appreciate what a good stout can taste like. At 527 calories/pint and over 10% ABV, you'll have to crawl your way to the second pint.

Carpe Noctem is the beer for you, if you like the dark side of life. This beer is a Belgian Quadruple that is dark (but not roasty), rich, and very strong. Like all Belgian beers, there is very little hops in this one, just enough to make it beer. Drinking this beer will help you seize your night by both enhancing your senses with rich complexity and opening up your free spirit by inhibiting your judgement center in your brain. Drink passionately, my friends!
